Kimchi Fried Rice Scramble by Wicked Healthy Food

Getting back on track with posting… HOPEFULLY. I have hundreds of pictures and notes from recipes I’ve been trying. FOCUS FOCUS FOCUS Squirrel Girl!!

I need to learn how to make Kimchi.. like really good, spicy Kimchi. This recipe NEEEEEEEEDS good Kimchi.

Other than that, this is a super easy and DELISH quick dinner that even tasted good next day for lunch (Per the husband Squirrel)

This was the first time I have actually cooked with Tofu because I am not a huge fan. I made this dish out of curiosity about the technique for cooking the Tofu. Not sure if I did it right but it turned out yummy so there it is! I didn’t have any extra hands to help with a photo and I am 100% sure I didn’t look at all confident doing it, so just go watch the video and find the recipe on Wicked Healthy Food. Love those guys!

 

There are THREE things I don’t like that I am constantly trying to incorporate into my life because they are either healthy or they are versatile (I get bored super fast).

So you will see me experimenting a lot more with these… hope I don’t die from it LOL

 

*Beets— they taste like dirt to me- tried them a million ways and still trying. Somehow I can handle juicing them as long as there is carrot or something else to cover the dirt taste

*Mushrooms–mostly it has been about the texture. I can handle them thin or on my pizza

*Tofu–don’t like the texture or taste…. yet

I also had cooked my rice with Better than Bouillon veggie stock because it is such a habit Next time I will leave it out. PH, and there WILL be a next time!!

All and all, you should give this one a try. Fast, super tasty and healthy! Just be sure to taste your Kimchi first! I know the rules about tasting stuff before using it and yet I failed…. I think I am still on puppy brain (new puppy=exhausting #mayaswellhavehadahumanchildagain )

I used:

Wholefoods 365 Extra Firm Tofu

Shitake mushrooms (couldn’t find shimeji)

Better than Boullion veggie stock- although I think I should have left the rice plain

Kimchi was bought at Wholefoods but I won’t name it because I didn’t think it was good- I try to stay positive here and won’t bash anyone ever

All veggies from Wholefoods

Avocado oil for frying/squishing the Tofu
