Chickpea Rice Soup with Cabbage By Isa Chandra

Better late than never, right? I was supposed to start my fun recipe reviews last week but being the scatterbrain that I am, I didn’t look at the calendar before I posted the date. OOOPS!  We spent a lovely 5 days in Carmel, CA with our two Pugs and now I am back to business and trying to be focused.

In case you missed that post, I have decided to challenge myself each week with a different recipe from all of the wonderful cookbooks I bought recently as well as trying out recipes from other food bloggers and chefs. Trying to keep myself accountable by giving myself a deadline so I will be posting every Thursday. Even though I blew the first one, I will try SUPER hard to keep on track!

I’m excited to share my love of flavor and cooking with you!

Here’s where I am starting! Hope you enjoy getting to know some of the cookbooks I’ll be sharing. 



SO how did I decide where to start? Whose book to pull first? It was super scientific. I stared and stared at them all and couldn’t decide so I just closed my eyes and picked one. 

Because I am still in vacation recovery I decided to make something simple and super healthy. I didn’t want a mountain of dishes so soup was a perfect choice. Plus, I LOVE SOUPS!

This recipe took no time at all. Easy and tasty with few ingredients. I recommend keeping this one bookmarked if you are short on time and ingredients for sure.

The basic ingredients are:

Olive Oil

Onion

Garlic

Cabbage

Carrots

Chickpeas–I used Wholefoods 365 Brand

Jasmine Rice

Fresh Dill

Thyme, Salt & Pepper

Veggie Broth— I only use Better than Bouillon veggie broth

VOILA! Here is the finished product! I did add a bit more Garlic, Thyme, and salt than the recipe asked for and decided to kick it up a tad with some chili flakes. You will notice as we go on that we love spice and spicy stuff in this house.


It was really tasty and filling too. It was great the next day as well! It thickened up quite a bit overnight so it was almost like a new soup!  

If I was going to change anything about this recipe I would probably add less Dill. It was pretty strong for the husbands’ palate. I would suggest starting off by adding a tablespoon at a time until you get it to where you want it. That’s it though! Easy, tasty recipe.
